Raw kale salad recipe…make it…eat it.

Does that not look amazing!

One beautiful head of organic kale..copped up small

3 large organic carrots…shredded.

1/4 head of organic cabbage (I used savoy cabbage this time!)  Any will do…purple cabbage makes it really pretty :)

Fresh ginger..about 2-3 t grated

Veganase…I like the grapseed one….about 1/2-3/4 c depends how creamylishous you like it (http://www.followyourheart.com/)

Curry powder…1-2 t

6/29 Hippy Food!!

What do you know.

Yogurt (plain) with a sprinkle of rolled organic oats and cinnimon. My pre yoga meal :)

1/4 cup of walnuts and chai tea with coconut milk (post yoga snack). The other little gadget in the photo is a lighter. This lighter is extra silly cause my hippy sister Haley actually made it out of leather and feathers. She wears it around her neck :)

Quinoa, sprouted mung beans, edemame beans, tomatos, green peppers all sauted with a little coconut oil and dressed with rice wine vinegar. How's that for some hippy food? Actually it was just one of those days that I needed to use up some food...so then I preceded to just mix them all together :)

Homemade meatloaf (this beef I buy from the farmers market is so great, local cows=happy cows), greeen beans, and purple potatoes! I grew these potaoes myslef!! They are so beautiful!

Nancys cultured lowfat cottage cheese and spagetti squash topped with pumpkin seeds. I dribbled a little bit of my left over salad dressing from Chipotle.

What a day! Of delicous food.

French press coffee with cococut milk! Sipped out of a beautiful handmade, wood fired mug....makes it extra special.

Ezekiel bread with organic sunflower butter and rasperry "only fruit" jam.

Salad (baby greens) with red quinoa salad (sprouted mung beans, tomato, green peppers, tempe, edemame beans) mixed all up with rice wine vinegar!

Can't go a day......

One more thing I think I have every day...a big ol fruit filled protein shake! Bomb.

Sprouted mung bean recipe.

Mung beans are small dried green beans with yellow flesh. Like all beans, they’re rich in protein, calcium, phosphorus and iron, but they’re mainly grown for sprouting. Mung bean sprouts have long been a familiar ingredient in many Asian dishes. Traditional Chinese medicine maintains that mung beans have a “heat-clearing, toxin-resolving” effect that eases conditions such as diarrhea and painful swelling. If the idea of growing your own vegetables appeals to you, you might want to start with sprouting mung beans. Simply soak the beans overnight and then keep them in a warm, dark container, watering them occasionally until they sprout. The delicate shoots should be silvery white with small yellow leaves, and have an understated nutty flavor. Whether or not you grow them yourself or buy them at a market, always use crisp, almost dry-looking sprouts – brown-tinged, wet sprouts are past their peak. They’ll keep for up to three days in the refrigerator.

Food as Medicine
Sprouting mung beans boosts their content of the following B vitamins dramatically: B1, 285 percent; B2 up to 515 percent, and B3 up to 256 percent.

Ingredients
1 pound fresh mung bean sprouts
1 tablespoon expeller-pressed canola oil
3 scallions, split lengthwise and cut into 1-inch strips
1 tablespoon finely chopped fresh ginger root
Salt to taste
Natural soy sauce and rice vinegar

Red and or yellow pepper

I eat this dish with strips of lean steak :)

Instructions
1. Wash, drain and dry the bean sprouts in a kitchen towel or paper towels.

2. Heat the canola oil in a wok or skillet; add the scallions and ginger and peppers, and stir-fry over high heat for a few seconds. Then add the bean sprouts and stir-fry for 1 minute. Do not overcook; sprouts should remain crunchy but lose their raw bean taste.

3. Add salt to taste. Mix well and serve. Add pinches of red pepper flakes or dashes of natural soy sauce and rice vinegar for additional flavor.

Chicken breast with roasted beets and asparagus.

Din din: ground turkey cooked with cherry toms, onion, garlic, kalamata olives, olive oil and herbs. On top of raw kale salad!

A blueberry crisp i made: blueberries, agave nector, cinnimon, oatmeal crumb topping with organic butter and flour.
